INGREDIENTS
¼ cup healthy oil (olive, avocado or coconut)
3 cups long grain white rice (I love basmati and jasmine)
3 ¾ cup liquid (water or stock, you choose)
Pinch of salt
DIRECTIONS
1.In a saucepan heat the oil over medium-high heat.
2.Add the rice and sauté for 2 minutes, stirring often. The rice should start to turn translucent and get a little nutty smell.
3.Add in your liquid (be careful, it’s going to sputter and spurt and steam), stir to incorporate, cover with a lid and allow to come to a boil.
4.Once boiling, stir again, then reduce heat to low, re-cover and continue to cook for about 10 minutes.
5.Check your rice. If the liquid is all absorbed, then turn off the heat. If not cook for a couple more minutes until all the liquid is absorbed.
6.Now, here’s the trick to perfect rice. Once you have turned off the heat, fluff the rice with a fork, take a paper towel and place it over the pan and then put the lid on again. Let the rice steam with the paper towel for 5 minutes.
7.Viola, perfect rice.

Here is the best part about this recipe, it lets you get as creative as you want!
1) Cilantro-Lime Rice: stir in 1/4 cup chopped cilantro and 1 Tbsp lime juice
2) Quick Spanish Rice: Stir in 1/2 cup of your favorite salsa
3) Sticky Coconut-Mango Rice: heat a can of full fat coconut milk over low, add in 1 Tbsp sugar, pour the hot coconut milk over the rice and stir in, add to that diced mangos (as much as you would like)
